Curso Superior de Chef en Cociña e Pastelería

The Advanced Chef Course in Cuisine and Patisserie provides the necessary training to become a professional chef. This private qualification spans 1,000 hours and is delivered on a campus covering 50,000 square metres. The programme is condensed into an intensive academic year, with nine months of study at the Centro Superior de Hostelería de Galicia and a three-month internship in restaurants.

PRACTICAL CLASSES: At the school, students learn in a professional environment, with practical classes held in specialised facilities, including an à la carte restaurant kitchen, a buffet restaurant kitchen, a cold room (butchery and mise en place), cold preparation areas (starters, marinades, and salads), and patisserie and bakery workshops. Additionally, students are taught essential management skills, such as efficient kitchen operations, menu planning, inventory management, and the use of tools in marketing, administration, and human resources.

SMALL GROUPS: Students work in small groups and benefit from constant support and guidance from the teaching staff. Daily academic work is carried out in a real-world environment: food preparation and management are tested daily in the à la carte restaurant, buffet restaurant, and café, all of which serve the CSHG community.

MASTERCLASS: The course includes 17 masterclasses delivered by Michelin-starred chefs and other industry leaders. There are also seven scheduled visits to businesses and producers to explore raw materials and understand the value of building strong relationships with suppliers.

FINAL PROJECT: Students are grouped into small teams to manage an à la carte restaurant for one week. Upon completion, they present their results to a panel, defending their concept, financial viability, and the design of the gastronomic offering, including the menu, operational management, and service quality in a real-world setting.

INTERNSHIPS: As a final component, students must undertake a three-month internship at restaurants across Galicia.
