Opened the term to inscribe in the course of management of companies of restoration of the CSHG

There are 20 squares for owners or managers of empressas of restoration of Galicia

Santiago, 27 of febreiro of 2020. The course forms part of the Plan of training of the tourist sector in which the Xunta de Galicia, through the Upper Centre of Hospitality industry of Galicia (CSHG) alía with the University of Santiago de Compostela (USC) to advance in the profesionalización and the improvement of the competitiveness of this type of businesses in the anteroom of Xacobeo 2021. The hard module 50 hours, 40 of them in face-to-face modality and 10 of autonomous work through the platform of teleformación of the CSHG. The classes will take place during five Mondays between April (days 13 and 20) and May (days 4, 11 and 25). The schedule is of 10:00 to 14:00 hours and of 15:30 to 19:30. The classes will give in the CSHG.

The aim of the course is to provide practical tools of management to direct an establishment of restoration with the purpose to increase the quality of the services loaned to tourists and citizens. Besides, it will improve the skills of the professionals to the hour to achieve a greater profitability of his businesses, optimising the material resources and humans of each establishment.

The students that surpass the course will receive a supporting diploma issued by the USC and the CSHG recognised with 5 credits ECTS.

The minimum requirements of access

- Professional experience of minimum 1 year in places of responsibility in the management of companies of restoration.

- Exert in the actuality this place in a restaurant of Galicia.

- Basic knowledges in the handle of the computer, as well as in the basic knowledge of the operating system Windows. For the module 4 require basic knowledges of Excel).

Contents

Module 1: Analysis of letter and menus. Management of foods and drunk (10 h).

- Definition of letter and menu.

- Conditionings for the preparation of a letter in a restaurant in Galicia and for the design of a menu (The menu of the pilgrim).

- Realisation of escandallos of the products.

- Realisation of technical index cards of a recipe.

- Analysis of the dishes that sell in a letter (economic balance, fixed dishes and recommendations..).

- Fixation of prices.

Module 2: Direction of human resources in a company of restoration (10 h).

- Direct and indirect influence of the plantel in the result of the restaurant: indexes of satisfaction and relation. - Different types of production and service.

- Organisation of planteles.

- Management of teams.

Module 3: New models of business in restoration (10 h).

- Attributes of the products of restoration

- Identifying new needs: the matrix segments by services.

- Creativity and innovation in the businesses of restoration.

- The plan of on-line marketing for the products of restoration.

- Practical activity: the menu pícnic of the pilgrim.

Module 4: Tools TIC for the management of the restaurant (10 h).

- Design and give format the leaves of Excel.

- Work with formulas and functions applied to the restaurant.

- Creation of charts and other tools for the management of the restaurant.

- Practical activity: realisation of a menu engineering applied to my restaurant.

Module 5: Management and administration of resources in restoration (10 h).

- The budget in the companies of restoration. Concept of budget and process of the budgetary control.

- The account of exploitation. Concept and instruments of management of the result of the business of the restoration.

- The control of the costs. Types of costs and systems of imputación to do the profitable business.

- How calculate the deadlock in a company of restoration. Definition and analysis.
